Vinification
Conducted in stainless steel tanks, with the emerged cap system and maceration of approximately 20 days. The fermentation temperature is controlled and maintained at around 28 ° C. After the malolactic fermentation, the wine is put in wood tanks for the aging.
Ageing
The first passage in steel, and 3 years in large Slavonian oak casks; once bottled it rests for about 6/8 months.
Organoleptic Characteristics
The Monvigliero is an austere and important CRU, with garnet red color, aromatic complexity, and a characteristic deep taste. Aromas of ripe fruit, violets, and undergrowth are mixed with balsamic and herbaceous notes. A great Barolo of excellent structure, with soft, enveloping tannins and a persistent finish.
